Grilled Shrimp Avocado Bowl
Updated: 04/07/2026 11:55 AM

2 cups shrimp, peeled and deveined
1 avocado, sliced
1 cup cherry tomatoes, halved
1/2 cup mango or yellow bell pepper, chopped
2 cups mixed greens 1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste

For the green dressing:
1/2 cup yogurt 1 tablespoon olive oil 1 tablespoon lemon juice 1 tablespoon fresh parsley or cilantro 1 small garlic clove Salt to taste

Method: I start by seasoning the shrimp with olive oil, paprika, garlic powder, salt, and pepper, then grill or pan-sear them until they develop a nice char and juicy texture. That smoky flavor really makes the dish stand out.

While the shrimp cook, I blend the dressing ingredients until smooth and creamy. Then I build the bowl—fresh greens first, followed by avocado, tomatoes, and mango. The warm shrimp go right on top, and I finish with a generous drizzle of the green dressing. It’s fresh, filling, and perfectly balanced between smoky and creamy.
